What are the cultures behind some of the martial arts?

Well I cant speak for some of the arts that you have mentioned. However the major forms of Karate, aka the four Okinawan styles all stem from Japan. Judo and Jujitsu also come from Japan, although you can see how it has been altered from Chinese Kung Fu.
